I have the same end goal, one healer of each class at 80, and the shammy is the last one to join the group. I have druid (yay!) and paladin (boo!) at 80, a priest at 65 and the shammy at 47, and I plan to level both to 80 before Cataclysm.

Also, draenei shamans rock, despite the ugliness of the elekk. Look on the bright side: a space goat in a skirt can ride other mounts without looking horrible.

(And from a very personal point of view, probably wrong since they’re not all 80, my preference goes druid > shaman > priest > paladin.)
